What Should Your First Shots on a Home Espresso Machine Look Like?
Summary
Start from the numbers your machine's maker gives, then change only the grind. On a Breville Bambino that means 16 to 19 g of coffee in the 2 Cup single-wall basket, a firm and even tamp, and espresso that begins to flow 8 to 12 seconds after you press the button. If it flows sooner, grind finer. If it only drips after 12 seconds, grind coarser.
Filling the basket
The Bambino comes with single-wall and dual-wall baskets, and the manual splits them by coffee. Use single-wall baskets with freshly ground beans, since they let you adjust grind, dose, and tamp. Use the dual-wall baskets with pre-ground coffee, because they regulate the pressure and smooth out differences in grind and tamp. If you bought a grinder with the machine, the single-wall basket is the one to learn on.
The baskets are sized for 8 to 11 g (1 Cup) and 16 to 19 g (2 Cup). Breville's product page calls 18 g the machine's ideal dose, which sits inside that 2 Cup range. Tap the portafilter a few times to settle the grounds, then tamp firmly. The manual puts that at roughly 30 to 40 lb, and adds that pressing the same way every time matters more than the exact force.
Watching the first 12 seconds
Pressing 2 Cup runs a preset double of about 60 ml, starting with low-pressure pre-infusion. The manual's guide is timing. Espresso should start to flow after 8 to 12 seconds and look like dripping honey.
| What you see | What the manual says it means | What to change |
|---|---|---|
| Flow starts in under 7 seconds | Under-extracted. Grind too coarse or too little coffee | Grind finer |
| Flow starts at 8 to 12 seconds | Within the guide | Nothing yet. Taste it |
| Drips but doesn't flow after 12 seconds | Over-extracted. Grind too fine | Grind coarser |
An under-extracted shot tends to taste sharp and watery, and an over-extracted one bitter and burnt. Breville's dialing-in guide gives the same order of work for any machine: grind size is the first thing to change. For anyone weighing the shot, it suggests a starting ratio of 1:2, so an 18 g dose would aim for about 36 g in the cup, and it puts a typical extraction at 25 to 30 seconds.
